spinach and pine nut farfalle pasta

This is a simple, light pasta recipe with the added nutritional benefits of spinach and pine nuts. I make this recipe a lot, it is quite delicious. This is one from my upcoming book that I have chosen to feature on my blog. Let me know if you try it!

Ingredients:

1/2 cup olive oil

1 garlic clove, pressed

2 cups fresh spinach, chopped

1/2 cup pine nuts, toasted

1 lb farfalle pasta

2/3 cup parmesan cheese, grated

salt and pepper

Directions:

1. Heat oil in large skillet over medium heat. Add garlic and cook, for one minute.

2. Flake in spinach, stirring for about 4 minutes or until just wilted.

3. Cook farfalle as directed on package and drain.

4. Toss with spinach and toasted pine nuts. Salt liberally and add pepper for extra flavour. Top with parmesan cheese.
