Chai Pumpkin Pie
2 prepared pie crusts
2 cups fresh pumpkin
2-1/4 cups brown sugar
1/4 teaspoon salt
3 eggs, beaten
2 tablespoons pumpkin pie spice
1. Mix all ingredients in a large mixing bowl.
2. Place in pie crusts.
3. Bake for 10-15 minutes at 400f. Reduce heat and continue to bake at 350f for 45 minutes to an hour.
4. Serve topped with cold whipped cream.
